HALF VS WHOLE
What does that mean and what am I getting?
When our cattle are fully grown, they usually tip the scales at a cozy 1000 to 1200 lbs (live weight). Once they're harvested, the carcass weight hovers between 600 and 800 lbs (hanging weight). After the thorough processing, which involves removing certain bones and organs, you'll end up with around 400-500 lbs of premium beef. So when you opt for half a cow, you're looking at bringing home a delightful 200-250 lbs of delicious, high-quality meat.

Typically, when buying a whole or half cow, up to 1/3 of the beef you put in the freezer will be ground beef, and the rest will be roasts, steaks, and other cuts like brisket, ribs, stew meat, soup bones, and organ meats (liver, heart and tongue.) If you don't like those cuts, you can have them turned into ground beef, which will obviously increase the amount of ground beef you receive.

What Cuts Can I Choose From?

When it comes to beef, the carcasses are sectioned into what we call "primals," and these are then further tailored to suit your needs.

While you have the freedom to choose your preferred cuts, it's essential to note that the entire carcass can't be magically transformed into steaks. Decisions will need to be made, such as opting for T-bone steaks, which means forgoing the chance to savor filet and New York Strip separately, as a T-bone steak essentially encompasses both.

Depending on what is available at the time of your order, you might also have the delightful opportunity to explore a variety of options like juicy hamburger patties, flavorful brats, savory beef sticks, and even mouthwatering summer sausage.
